Start Your Year off Right with Healthy Home Cooked Meals - Cindy Rodriguez
It is a new year, so why not start the year by eating healthy? For those of us staying home more than usual, it is essential to find an easy and efficient way to eat healthy at home. Hear from the innovative health expert who has created a unique product, One Potato, the organic family-friendly meal kit delivery service.

One Potato is an organic, family-friendly meal kit delivery service. Right now, we know families are looking for affordable solutions and ways to connect and ensure their families eat healthy, nutritious meals, and this product has just that. One Potato also offers frozen smoothie packs, which are an excellent way for parents and kids to start their day.

One Potato boxes features semi-chopped and prepared ingredients along with simple instructions. The meals require only 12 and 30 minutes to prepare. The boxes are designed to encourage kids to help with dinner. One Potato plans are based on family size, how often customers would like to cook (2 or 3 meals), and any dietary restrictions they may have (there are gluten-free and nut-free options).

I am always looking for the latest ways to eat healthy that are affordable, easy and delicious, so I asked the creator about this products benefits, and some tips for eating healthy daily. Catherine McCord is the co-founder of One Potato and the founder of the popular Weelicious brand, a trusted content resource synonymous with family and food.

This innovator is a graduate of the Institute of Culinary Education, she has created online how-to videos that have amassed more than fifty million views and celebrities like Jennifer Garner, Sarah Michelle Gellar & Keri Glassman, RD, swear by her food as a medicine approach to healthy tonics. She has written three cookbooks, including her latest Smoothie Project. Catherine has appeared on TODAY, Good Morning America, California Live, The Doctors, and is a regular on the Emmy-winning NBC show Naturally, Danny Seo as well as Food Network's #1-rated Guy's Grocery Games. She lives in Los Angeles with her husband and three children.

We asked Catherine to mention some foods that she feels are the most important to eat for your daily health. She shared with me that she is a huge believer in balance. She says, "If you're eating fruits, vegetables, protein, and carbohydrates, you're winning." Some of the many family's healthy go-to foods are sweet potatoes, kale (in smoothies or on yogurt), almonds, and berries.

Another hot topic we had for her was to mention some of the benefits of eating healthy foods. She said, "When you're eating healthy foods, your machine (aka your body) runs better. You can think more clearly, your digestion feels better, and you have more overall energy."

Another question I asked her is how can people benefit from One Potato? "One Potato is here to make parent's lives easier! Each box offers semi-chopped and prepared ingredients and simple instructions that only require 12- 30 minutes to prepare. One Potato is designed to encourage kids to help with dinner, and plans are based on family size, how often customers would like to cook, and any dietary restrictions they may have (we offer gluten-free and nut-free options)!"

Finally, we asked her what are some of her favorite nutritional products. Her answer is, "Every morning, I have a smoothie our of my smoothie Project Cookbook for breakfast. It makes me feel like I'm doing something good for my body. I always add plenty of protein to keep me full and I always add a scoop of collagen peptides for my hair, skin and nails. In the afternoons I always need a pick-me-up and my go to is Heath Ade Kombucha. I love my air fryer! We use it all the time to make healthy, crispy vegetables, reheating pizza, making quesadillas, cooking chicken, salmon and so much more!"
